I will be the first to tell you that I am pretty much a baby when it comes to spicy food. I think it has to do with the fact that when my tongue gets numb from any hot spices I don't like the feeling as it takes my mind off of the taste of the food in my mouth and makes me focus on trying to get rid of the burning sensation. My husband, on the other hand, has a slightly different pain threshold than I do. So, in order for me to gauge whether or not the Hellish Relish was going to be successful as a new product from JamBusters I needed a willing victim. I turned to the hubby and, with spoon in hand, shoved a chunk of Hellish Relish into his mouth before he had time to react. I was actually expecting his face to contort and either see him pass out or run away screaming. Neither happened. He slowly moved the sample around in his mouth with his tongue to activate each and every taste bud not already shut down from years of sugar abuse. He smiled. He took a glass of water and swallowed. He had an encounter once before with habaneros so I was a bit curious as to why he didn't show any of the signs I've seen before. He explained it to me in this way: The relish has a nice initial burn that tingles the tongue and mouth in such a way that you know you have something hot in there, but it doesn't burn too hard or for too long because the softer note of pears comes to the rescue and pushes the burn aside for a bit. The tingle will continue, but the fruit allows it to subside so you can taste the rest of the food you are using the relish on. Others who have tried it agree, the pears give it an interesting twist. A new batch of Hellish Relish is being finished today. In fact, I had to get away from the kitchen long enough to post this. If you like something that burns, but relaxes a bit after you've felt the initial blast, you'll love my Hellish Relish!

They are finally finished! I'm going to call them 'Christmas Tubes' and sell some at the office for a flat price. I figure we can easily get three different jars of items from my stock into each of these handy containers. The idea actually came from a church friend of mine who approached me a few weeks ago looking for unique 'homemade' gifts. She knew I made jams, jellies, salsas, relishes and pickles and asked if I could make up twenty different gift sets. She gave me a budget to work with and it worked out perfectly! I had considered just having a few new items available as single purchase gifts going into the holiday season but thanks to my church friend I have been inspired to offer a little bit more than I had originally planned.
